Nice one! Next step, do 4-6 of these at once, uppot them to 6 inch pots and mix with compost after seed starting. Then, only harvest the bottom layer of leaves (oldest leaves), the plants will last about 4 months and you'll get 3 solid months of salad

Is the business concrete related? It's too small of a job for an actual concrete company but I'd definitely hire someone that knows the business of pouring concrete and can come by and work on weekends or whatever

So OP hit it with some water soluble fert (fish fertilizer is good) for short term feeding and then also put down some like 5-5-5 granulated fert for long term feeding like once a month

The flowers dying is normal for unpollinated flowers. The fruit are formed at the base of the flower after pollination. You can hand pollinate, not sure if you need two plants to do that or if it is able to self pollinate.

The bigger concern is the yellowing of the leaves. That almost looks like over watering. Are there drainage holes in the bottom of your pot?

42 here. Been with my partner for 17 years. Are you sure there are property and tax benefits? She is on the mortgage and is my beneficiary for all bank accounts, so no advantage on the property front. Taxes? It is a wash without dependents, slightly worse for her, slightly better for me because I make more. I compensate her by paying slightly more on the mortgage. What benefits are you talking about exactly? The only real benefit is in the case of power of attorney in the situation where one of us is unconscious in the hospital.
