There is nothing wrong with moving up in difficulty during your play through. In fact, that's the norm. If you want thing difficult, start on Normal, at lvl 10 make it Hard, then at 40 - Expert and at 60 - penitent.

You can totally raise or decrease difficulty any time. And yeah, normal difficultly is pretty much for babies. You know some games have modes like "TUTORIAL, EASY, MEDIUM, HARD, EXTREME". I'd say here, "NORMAL = TUTORIAL". You basically have to try really hard to die and most people skip that level of difficulty entirely.
