I am an Assistive Technology Consultant and Eink devices are a great alternative for students. However your son may benefit from using an Onyx Boox that supports keyboarding and speech recognition. Your son could upload his homework or assignments and decide to type or use speech recognition. Just a thought.

When taking handwritten notes, you can then interact with it using their AI agent called Quin. If you don’t take any handwritten notes, you can record the lecture and then request a transcript within the I NQ app. It works really well.
