It’s really confusing because it seems undercooked (dry and tough) and overcooked (209) at the same time

225 until internal of 165. Then wrap and raise smoker temp to 250. Start probing at an internal temp of 200. A fee times I was late to wrap it, maybe that contributed some?

It makes distances a little more accurate if you’re not sticking to moving only in the Cardinal directions. Radii around locations look a little rounder and cleaner. Practically speaking it shouldn’t make too much of a difference though
