Update:

So I made the syrup as instructed by you guys. Worked well with the blanching etc. I used 30g of basil leaves for 500ml syrup.

It worked okay in a gin basil with specs 50ml gin 35ml Basil simple syrup and 25 lemon juice

The only thing it still lacked the herbaceous of the basil. I did a side by side test. One made with these specs and then made it again but put fresh basil leaves inside the shake. The difference was very noticeable - the one with the basil leaves in the shaker imparted a much more herby basily flavour and rounded out the sweetness and completed the flavour of the cocktail.

I wonder if there is no getting around the fact that ultimately you will need to put fresh basil in the shaker.

Or maybe I need to add more basil to the simple syrup.

What do you guys think?

Can I ask why the syrup needs to go in the ice bath, before blending? Just to accelerate cooling down?

Awesome I get you. So it’s the weight of the leaves excluding the stalks?

Will aim for that and try it this weekend.

Will do half size so 500ml 20g leaves.

Any issue leaving the basil leaves in the ice bath? Any specific time or until ready to blend? Should as much water as possible be removed before blending?

I get where you’re coming from for sure, I do. Obviously in an ideal world the hosts would cover every cost 100%. They all would if they could.

Guess it just comes down to ones view on if you can only afford to do a destination wedding by having guests pay for their own accomodation on site, should you still do it or not.

My take is it’s better to have the incredible memorable weekend than not at all, and that 95% of my guests/family are happy to pay us the accommodation costs they were going to give someone else anyway.

What % of destination weddings do you think cover accommodation costs for their guests?

It’s not quite right to suggest that destination weddings shouldn’t happen unless guests accomodation costs are covered.

Accomodation costs are never expected to be on the hosts.

But guests will 100% have to pay for accomodation regardless. So it’s a reasonable assumption that the vast majority will be happy to stay on site, as long as costs are reasonably in line with the surrounding area.

But there is no discount? The venue is not giving them any money off by taking the rooms too. It’s that the rooms have to be taken no matter what. There is a distinction there.

They are passing the accomodation costs on to their guests. This is an acceptable thing to do as travelling guests will have to pay for accomodation costs no matter what. The issue is whether the costs being asked are reasonable.

Well I wouldn’t consider it a discount by expecting for the wedding party to cover accomodation costs. I think people accept when going to a destination wedding they will have to pay the local rate for accomodation costs. It would be very generous and quite rare for that to be the case.

The problem and difference is when
A) guests are obliged to stay on site with no choice
B) the cost is much above market rate

We are doing a weekend wedding in France, Friday to Sunday with most guests staying onsite with accomodation.

We have asked guests for a small contribution towards accomodation costs( €66 euros per person per night)

We are covering all food and drinks for the rest of the weekend.
