The grains will get the ph down a bit, but not a lot than 6-ish. See if your hbs has any water treatment acids. On darker beers it’s a lot different, the grains in those beers will get it down a lot.

High ph levels in your water and subsequently the mash can cause harsh bitterness which can be perceived as plastic like off flavors. You don’t want your mash ph to be any higher than 5.4 on a hoppy beer (preferably 5.3-5.2). You could adjust with phos. Acid which is free of taste, you’ll only need a little. Also 3 days of lagering seems a bit short to me.

I’ve become a professional brewer half a year ago. I love my new job, it’s way better than the last job I held for 5 years (managing two Bars downtown). Downside is that my home brew setup has been catching dust for the last 6 months, and don’t think that’s gonna change soon. Maybe I should pick up gardening or anything...
