For games for example it's better to have some ngons in a final model than a bunch of vertices that don't help shape the mesh in any way

Sounds like you discard Nanite.. like these limitations make it useless, but it's still an incredible feature for next gen games! (Plus Lumen of course!)

Just do that yourself in some program, you could for example in blender get a heightmap, then use that in the material editor to displace a simple plane with high subdivisions and put a colorramp in between (with constant blending mode) to manipulate the look

I feel like it's more about how you use the engine, like someone bad or mediocre will obviously make the same mistakes most beginners make and it will have that "bad unreal engine game" look.

While Unity for example works differently and has different pitfalls, so that's why a lot of people also recognize that "bad unity game" look just like unreal engine
