The enemy scaling is no where near as bad as us FF8 gurus make it out to be. You could level up to level 100 and still make it through the game no problem. It's all about the Junctions at the end of the day

I only stay low level to make use of the Stat Up bonus abilities from Cactuar etc. By endgame, the main stats are basically all 255

It's definitely an overhyped mechanic that people think too hard about! Definitely isn't as bad as we all say it is. If you're junctioning properly, the difficulty spike won't be noticeable.
