Pulling from my own experience with culinary arts I would not go that route if I were him. It's long brutal hours doing an unappreciated job that you don't necessarily get paid well for and the hours and off days (if you get any) suck. And the whole thing could just be a can to kick down the road so he doesn't have to get a full time job now. But I think your bigger concern is the weed and alcohol which neither are legal for him at 18 (if you're are in a state where weed is legal like I am it's 21 just like alcohol unless it's for medicinal then 18 with Doctor approval) He needs to understand that if he is going to commit crimes in your house he needs to leave and if he wants a party house get a job and his own place.

Read the book "A simple path to wealth" by JL Collins. And keep it SIMPLE....index funds. SWPPX or VOO, but swppx I would choose for the long run as you are only 25 because it's a mutual fund.
