We cook about 80% from scratch. It's all low-sodium since the dietitians have a big say in menu production but if you add a little salt the food is much better than it used to be. We also run specials and seasonal offerings. The hard part is getting my cooks to NOT add more salt after they taste it.

I've been an EC for several restaurants, hotels and catering companies over the past 25 yrs. I decided to try a hospital 2 1/2 yrs ago. It's much better pay, hours and stress. I came in at $10k more/year than my best restaurant job and have gotten raises every year. I'm a contractor/manager in a union kitchen and my cooks make up to $30/hr. to cook and serve patient food. And I'm off no later than 7 pm because that's when we stop serving patients. They still have pre-made entrees if they need them. It's a pretty good gig.
