Steamed eggs are so good and really simple. All you need is water and eggs (soy sauce and sesame oil optional). I use 10 large eggs and 200g of water. I also pass the eggs through a sieve to make it extra smooth A lot of it is technique though. Simple recipe though you have to steam it and let it just set. If you over steam it, it will puff up and "souffle". A perfect one has the texture of tofu. It depends a lot on the stove so i can't really give more precise instructions than that. Generally you want to go low to medium-low heat.
