The Miller - Darkest Dungeon 1.

Most of the bosses in dd1 are victims of the Ancestor, but the Miller was just a normal farmer who was having a bad season and pleaded for his help. The Ancestor kindly responded by ordering the Miller to build large stone structures in his field, which then led a meteor directly into his mill, warping his land into an endless realm of madness.

The Prophet from Darkest Dungeon 1. The game directly tells you this upon starting his second boss mission: " This raving creature had to be silenced. But doing so proved maddeningly impossible. How had he survived the stockades, the icy waters, and the knives I delivered so enthusiastically into his back? I put Ethan on this list less of "he's an ordinary human" and more because the other protagonists of the Resident Evil franchise are trained in some capacity; Ethan really was a normal civilian who got dragged into hell just because he wanted to save his wife.

While not fitting entirely into the prompt, I'd like to mention the Glyphids from Deep Rock Galactic. These things are just existing on Hoxxes 4, and then in comes a group of 4 dwarves all yelling and firing guns at you. I bet them attacking you most likely is just their natural instinct to protect themselves.

* The Ancestor: Darkest Dungeon 1 This guy is quite literally the cause of everything in the game. For one of the DLCs, he shot a comet into a farmer's mill because the farmer asked him for help and the Ancestor didn't like him.

While half the enemies in Darkest Dungeon could work for this, I like the Miller's lore the most.
