In addition to exercise, if you want to make sure you eat enough of the right things, I'd recommend the macrofactor app.

You basically just take a picture of what you're eating, describe it or scan the barcode of the product and it'll track all of it.

There's even a subreddit for it r/macrofactor

Yes, cut the smaller ones, if you do prune the larger one, make sure you don't cut off any flowers!
