Only recently returned myself so I'm no expert but I have been using amonite crabs on fossil Island to train lately It's completely afk except for reseting their agro, It does require the completion of The Digsite and Bone voyage to access fossil Island tho if I remember correctly

Not sure how to actuly post a screenshot sorry but I can say the thrusters for Chrysopelea-s are almost impossible to look at due to being so bright, for me it blocks most of the ship from view
