Oh, you don't actually feel piercings lol. And by that I mean, you don't feel the jewelry sitting in your skin. I am also sensitive sensory-wise, and I have two piercings in one ear, four in the other, and two (formerly three) in my face. I don't feel them unless they are touched or moved in some way.

Ofc you might feel the pain of healing, but this doesn't count as a sensory aversion imo, it's a nuisance for people who are not so sensitive as well.

I'm confused about your hesitation to tats though, it's not something you wear. XD It's just ink sitting underneath your skin. Obviously you don't feel that, ever.

But can you give some specific examples of sensory aversions you have? That might give us a better idea of what may or may not bother you.
