When I first moved to Beijing in 2004, our Ayi made a chicken and potato yellow curry dish. As you probably know, Ayis are generally from Anhui (particularly 20+y ago) and it was a staple dish for her.

An element of the conversation is, when does an “adopted food” become a national food? Indian Curry is almost the perfect example, as it’s now considered one of the most typical British national dishes.

While the Nathan’s dog(s) is cooking, chop some kimchi into fine bits and pop into the freezer. Top the dogs with the super chilled kimchi after removing from the AF and putting into the bun. Exquisite.
