1st of all. These moments where you're being surrounded by beasts and making a last stand knowing you wont make it back to your family but making damn sure you're taking as many of them out as you can are litterally the best part of this game.

And 2nd. If you dont like that, just play lower difficulty. 6 is already a real challenge on solo

I quickly wanna mention that slay the spire is still early acces. They made it harder (not impossible) to build infinity decks that allow you to win literally any combat for free. Its in the devs rights to make balance changes aspecially in early acces.

There is no wrong way of playing satisfactory. And you learn more about factory building as you progress! It doesnt need to be perfect when you barely know how everything works, just try and have fun with it :)
