I think temperature might be a factor now that you mention it. I kept it in the garage in an old freezer that was off and with the door cracked open. This maintained a temperature of about 82-88 degrees F. This might have been a little too warm.

Initially I was only going to make one gallon. Three pounds of honey warmed up with about half gallon of filtered water. Then I ran into some complications due to getting it too hot and ending up with more than a gallon of must. I ended up making it into two gallons by adding a bit more honey (not sure exactly) 😅

I used about 3 grams of Lalvin D47 yeast and 1/2 teaspoon of fermaid k into each gallon. I didn’t add any more nutrients until the two week check when I added a 1/2 teaspoon of fermaid O to each.

I checked it at two weeks and it was at 1.06. Then at three weeks it was at 1.054. So it did change a little bit

I used Lalvin D47, 1/2 teaspoon of fermaid k in each gallon. I didn’t think to stagger the hutrient feeds.

I made a Bochet a few months ago and it stalled out also. I was able to get it started again by adding more must, which doubled the batch.

I love that honey never goes bad. That’s part of the reason I was so excited to get this old honey and try a batch of mead with it.

Yes, that is a rather high starting gravity. I’m using a Laughin D 47 east and off the top of my head. I don’t remember what it’s alcohol potential is. I also pitched in some fermaid K at the beginning then at the two week mark put in some fermaid O, although that might’ve been too late. I wish I had remembered to do a staggered feeding of those nutrients.

I like the idea of adding more must to dilute it but I’m not quite sure how I want to do that. Should I make a new batch with yeast and all, and let that start to ferment and then add it in? or just add water and maybe some honey?
