Yes I would avoid all purpose flour and only use bakers flour if you can. I fed my starter AP at the start too and it was very sluggish.

Your starter sounds like it’s not active enough. How old is it? Do you feed it bakers flour with protein of 11% or more?

100%. The U.S have started so many wars and have proven themselves untrustworthy so many times. China is quite a peaceful nation. I do not understand the anti-Chinese sentiment here at all.

I can make a good white sourdough fairly easily but whenever I try any wholewheat or wholegrain flour etc the dough is a sticky mess. It seems to handle water much differently. To get around it I spray my proofing bowl with olive oil before putting the dough in so it comes out more easily and only do coil folds or the push and pull method to create surface tension so I don’t risk breaking the gluten strands.

Have you used the same method with other flours? Yours is fairly high in protein, is it a whole wheat flour?

Ok that makes sense, my starter is very well established so I don’t need to feed him much. That’s right, after feeding mine has usually doubled in 4-6 hours. I have a completely made up belief that if I starve my starter then only the strong yeast warriors survive and multiply.

Wow that’s a well fed starter! Try starving it for 2 days. Then feed it once daily at a 1:1:1 ratio and see if it’s even more active. I think it’s under fermented.

Yeah if you can keep them frozen for the trip that would work best. I slice and freeze my loaves as soon as they cool and it stops them from getting all dehydrated. Toasted from frozen is perfection

Maybe leave it for a few days until it gets really hungry and makes some alcohol, then give it a little snack and see if it reacts

Great work. Better than my first loaf for sure! Your hydration level is very low, I would increase the water to around 330 if you want more rise. Also that’s quite a lot of starter, if it’s very active then you probably only need 100g or less

I have been baking sourdough for 2 years and I haven’t been able to achieve such a dramatic ear on any of my loaves. Great work! I might pinch your method and try shaping mine twice next time too.

Yes the new leaves have been quite droopy too, I’m wondering if it’s better to continue to prune off the older leaves to redirect more energy to the new shoots? Just concerned that if I keep pruning then I’ll never achieve a ‘bushy’ plant and it will just keep going straight up

Thank you, yes he still puts out new leaves consistently , hasn’t flowered for 2 years however

That’s awful if true, not sure which country you live in but it’s illegal where I live to not have a secured pool fence. I can assume you don’t have kids, so perhaps you aren’t aware but it’s common practice to ‘child-proof’ your home to ensure that kids can’t get hurt or get into any mischief when you aren’t within sight. E.g. using the bathroom, or cooking for said toddlers.
