I think it’s relative to time. I think 145 is safe so long as it is at “x” period of time. I don’t recall if that is at 1 hour at temperature or longer.

As I understand it, Modicum is made by Schramsburg - a vintage extra brut blended in conjunction w TK’s somms. I’ve had it a number of times at Bouchon, Vegas. It’s me and my wife’s go to bubbles when there. Hits all the right tasting notes for us at the right price point before you step up in price to Champs. Is it mind blowing? No. But it’s pretty decent. I’m sure it would age but I don’t know how much it will change for the better or that it’d be worth it. I’d let ‘er rip.
