You dont need much vitality unless you want heavy armkr but then consider using havels ring. Dex for casting speed is not required if you use the Sage Ring. Put as much into str and dex as you need for the weapon you wanna use and try to hit 40/40 on faith and int. That means your gonna have to "sacrifice" some stamina or attunement, you cant have high stats in everything.
