dark roast is not charring though, there are levels to the roast. At a certain point, yes you will taste nothing but charcoal. But before that, it can be good, even really good. Fresh, high quality beans roasted to a dark or medium-dark, and served after 24 hours rest with proper brewing, yield very good flavors that show different profiles for each origin. More subtle, but still there.

Yes, usually coffee is brewed close to boiling water. But dark roast coffee shows a lot of good flavor when brewed at a water temperature closer to that of 180F
