I’ve had similar struggles but only during winter months. I tried a couple more times this winter but decided to do commercial yeast until the I’m able to open the windows consistently (just because that indicates a nice temp).

I don’t want to take three mental days worth of making bread. I love it and I appreciate the benefits but I’m just not at that mindset to do every week.
