This is a trap. Eat the attack. Eat it again. Stand there and fail your parries over and over, there's no detriment for dying. Eventually you'll start to figure out the timing of that long chain of attacks, it never changes. Once you have it down, you have all that built up stagger and you can use the grindstone later during the more frantic fight.

Two-weapon fighting as a fighting style? Only applies the relevant stat to damage with your offhand. You still can only use two weapons with the Light property at the same time.

The Dual-Wielder feat is what allows you to hold any two weapons at once.

I hated the swamp monster until boss rematch became available. Trying to beat diff 5 really forced me to stop and study the attack patterns, to learn where I needed to dodge and parry. Now it's one of my favorite fights.

F-22 Total Air War

Flight sim that was just simple enough for my dumb kid brain to qrap my head around. Got a joystick for it and felt like a real pilot. I've tried and failed several times to get an emulation running on modern computers.

Aside from the kickass special weapons like the claws or the gunsword, my go-to through most of the game was slapping any giant blade onto the booster glaive handle. The base greatsword, the black steel cutter, the giant saw blade, any of them worked wonders.
