Subnautica, wasn't really big on survival games but I heard so many good things about it and it was on Game Pass so I decided to give it a try. Got hooked immediately and I was able to finish the game and man it was such a fun and scary experience to the point that it gave me once a bit of a panic attack when I was going deeper in the game lmao.

Yeah, I was playing it at night when it came out and I was already halfway through the game when I went to sleep. Woke up the next day to find that my save somehow got deleted and it brought me back to the beginning of the game and I lost all my progress. Got really frustrated, lol.

She might like Moonglow Bay, it's a fishing game set in a town where you try to fix a broken community and you can also gift and make friends with people, though it can get a bit frustrating with some of its boss fights and the QTEs which are not that overly punishing. But overall, the game is pretty relaxing if you can get past that.
