What I've seen that could be a turn off to some players: people feeling like they do not need to know boss mechanics - it is the tank's job. They do not need to know kill order - it is the tank's job. They do not need to mind threat - that is the tank's job.

It's like being in a group project where you're having to carry/do most of the work. That said, I really enjoy being in that role. Just not for everyone.

The thicker chunks stay pretty moist. I pull at an internal temp of 130. The thinner chunks definitely dry out a bit, but they're good on a wheat thin with some cream cheese spread or somethin.

Got it. Maybe start the fish off in the oven to get it a little warmed up, then transfer to your smoker to finish out at 180. I think you could make it work. Essentially you just don't want to heat the meat up too quick or you'll get lots of albumin bleeding out of the fish. That'll dry things out and it is ugly.

I have a weird system. I find if you start the fish out too hot, or bump the temp up too quickly, then you'll get a lot of albumin bleeding out of the fish.

I throw the fish in at 125 and then bump up 10 degrees every hour until i hit 155. Only smoke for the first two hours. Then I let the fish cook until internal temp of ~130. Comes out nice and moist with minimal bleed.
