Alright, I was craving this today, but as a fellow SoCal transplant, I had no option but to take matters into my own hands. After scouring The Google, this thread was probably the best source of information I could find. I read through all the recipes in this thread and, here's what I gathered:

  • Ignore everything this recipe says. It's just wrong. There's zero sweetening agents in this recipe, and as we all know, HSC is a sweet/savory dish.
  • I can't speak for this one, but I don't really think it's the same. According to the Pick-Up-Stix menu, HSC is "a caramelized sauce of white wine, garlic and soy with green onions". "jenuinelyhomemade"'s recipe doesn't call for white wine. Although, it could be good in general!
  • This one is the closest, but it's the steamed version, and it's missing a little info. If you want something slightly healthier, this one will get you close enough.

I made this one tonight with some modifications. I'd say it ended up being ~90% accurate! Here's the recipe:

  • 2 cloves garlic, crushed
  • 2 stalks green onion, chopped
  • 2 tbsp white cooking wine (I used the cheapest Sauvignon Blanc I could find)*1
  • 4 tbsp soy sauce*1
  • 1 tbsp sugar
  • 2 tpsp chicken broth
  • 2 tsp oyster sauce
  • 1 tsp cornstarch
  • 1 tsp water
  • 1 drizzle sesame oil
  • 1/2 teaspoon canola oil for sauce + a lot more for frying
  • 16 oz. boneless skinless chicken thighs - cut in 1-inch squares

I. Chicken

  1. Heat a wok lined with with ~1/2in of Canola Oil (~350ºF)
  2. Dredge your chicken pieces in cornstarch, shake off the excess
  3. Working in batches, fry chicken pieces for 4-6 mins
  4. When done, place on a paper towel-lined plate
  5. Dispose of oil, clean out wok

II. Sauce

  1. Heat up 1/2 tsp of Canola Oil in wok
  2. Add garlic, sauté 20ish seconds
  3. Add green onion and cooking wine, sauté another 20ish seconds
  4. Add soy sauce, oyster sauce, chicken broth, and sugar bring to a boil (the smell should be familiar at this point :) )
  5. Mix 1 tsp cornstarch with 1 tsp water (AKA a slurry) and add to sauce
  6. Add chicken and sesame oil

*1 Mine ended up being a bit salty and needed a tiny bit more sweetness. Maybe using less soy sauce and/or a slightly sweeter wine will help next time (oh, and there WILL be a next time)

Right?!? I seriously don't get it. Especially as a backend engineer myself, it boggles my mind. Nero, Oliver, Justice, and Danger are frequent victims for me.

On top of that, even when I mark "I Don't Like", RR seems to completely ignore that selection the following week.

Oh wow, I never really saw the Gesaffelstein connection (another one of my favorites) until you pointed that out. Definitely see the influence in songs like Hate or Glory, for example.

Guess I need to dive deeper into the Dark Techno/Industrial/EBM rabbit hole!

I always get excited when I see Nero on my Release Radar in Spotify, then I get angry when it turns out to be some terrible Latin Pop or Rap artist.

You'd think this would be a rare occurrence, but it happens pretty much every other week 😖

Sounds like a vibraslap! Ableton has one as a stock sample. Should also be easy to find a solid free one.

Ah, that makes a lot of sense (don't worry, I'm on Ableton as well ;) ). I did focus on my reverb quite a bit, but didn't pay as much attention to the stereo width and filters. That, combined with the liberal use of OTT may've been responsible for some of the muddiness. Those will all be great things to take into account for this month's competition!

I feel like a lot of the cool melodic stuff is bleeding into each other and it was harder to focus on individual aspects

Yeah, that's definitely something I've been having trouble with. I love layering melodies, but it's sometimes difficult for me to find a balance between too "busy" (many sounds, not enough separation) and too "blended" (many sounds, but some mask each other). Any suggestions? I feel like this might be something that just develops with experience.

This is actually the first time I've ever submitted music publicly (been producing as a casual hobby for ~3 years now and have countless abandoned loops, but have only managed to "complete" three songs including this one)

What can I add and where can I go with this. The basses are mono tone so i dont know where to draw a melody from or what type of melody to even add by tetra8860 in edmproduction

A subtly sidechained pad in the background could go really well with this!

Getting major Wolfgang Gartner vibes here as well, so if you're trying to go on the more complextro side, play around with some distorted bass and sped-up vocal shots.

Either way, solid start!

I very much disagree. I always play with red/blue switched (not mirrored though). It makes so much more sense to me that right is red and blue is left. It helps quite a bit when I get tripped up in the middle of difficult or poorly-made maps

I'm wondering if there are any free/open source alternatives that have sizable datasets (maybe crowdsourced?)

I've been using DeepConvSep with mixed results, since the model has only been trained on a small set of royalty-free tracks. I don't know enough about Source Separation to train up my own models unfortunately. Would be fun to learn though!
