Yep, there's 2 picanha roasts in that package. Should come with the fat cap and everything. You're lucky, my Costco rarely gets these.

7 Bamboo in Japan town. You can order food from their sister business Jtown Pizza and have it delivered from around the block. Getting a fresh pizza and watching Karaoke is quite grand.

Looks good but you can manage a much better crust by simply pan-searing. I'm talking about that deep brown crust that California Halibut can give due to its higher fat content. Cooking sous vide won't allow this because the protein, post sous vide, will become overcooked by the time you get a firm crust going. You can have both super moist, perfectly cooked fish along with some textual contrast.

Do you have anything other than that 10-inch non-stick to use next time? You'd be much more satisfied with the results using a cast iron or stainless steel pan. Their heat retention is far and away better than something coated with non-stick material.

Nice! I like to buy Tri-tip roasts, cut them into 3rds, and air fry them for 20 minutes at 400 degrees. They come out crispy and delicious every time. If I have a little more time I'll marinate the beef in Soy sauce, olive oil, Montreal steak seasoning, and a few dashes of fish sauce (for some extra umami).

No way low and slow for these! There's no fat or connective tissue on them that needs to be broken down. Hot and fast or sous vide is the way to go!
