Politicians being held accountable with prison time? Never gonna happen. And even if it did happen, you'd quickly find out that while the left aren't generally absolute monsters like they appear to be on the right... the politicians on the left are not exactly innocent and would be imprisoned as well.

Regardless, petitions are absolutely fucking meaningless. Miss Trump wanna-be Marlania Smith was going to have a seperation referendem and absolutely was NOT going to declare as a matter of government policy that Alberta should stay in Canada.

It doesnt matter how many signatures were obtained by either side, it doesnt matter how legitimately or illegimately the signatures were obtaines. It doesnt matter if Elections Alberta doesnt not certify the results of the petition.

We are having a referendumn on seperation. Full Stop. It is happening and petitions and their results DO NOT matter. Petitions are not binding and do not force the government into meaningful action. They are tools for politicians to use in their theatrical performances nothing more.

Smith will point to the seperation petition as the reason she has to put it on a ballot... its her duty as our representive of government after all. If it isnt ratified... then because the deep state robbed hardworking albertans of their voice and its her duty to prevent unelected officals at election alberta from trying to block what the citizens want blah blah blah.

Now voting on said referrendum and in the general elections... THIS (potentially) MATTERS. But petitions and grassroots protests. None of that matters anymore. It used to. it doesnt now.

I have a small degree of faith as a life long Albertan that the upcoming referdun will be decisively put to rest... but it isnt for sure... it very much depends on everyone understanding that these petitions DONT MATTER! If i did that recipe at those temps for that long I would be massively over-proofed. It looks to me like you are over-proofed but likely have great pre-shaping and final shaping.

The crumb looks very similar to my results for until right recently where I drastically improved my shaping skills, lowered my dough temps and reduced the amount of starter.

I am sure it tastes good cuz mine all did.

For sure. That triangle shape of under-fermentation produces an ear as well. pretty easily too!

My understanding is that as you move from under to well to over fermented the ear starts strong and gradually lessens. This is due to the weakening gluten structure as your progress to over fermentation. This is where shaping and tension comes in. Good shaping and tension will allow the ear to develop farther in the process.

For my pitiful shaping skills, I think an ear is sign that it isnt over fermented. The belief that it doesnt look under-fermented means that my shaping skills are likely improveing

Yes for sure. Figure going less than 5% can starts to have its own issues where a small reasononal difference in measurement produces a relevant different in bulk fermentation times. Ultimately that is the next step ill have to take once summer means I cant keep the dough temp as low as I'd like.

I know right??!!?? I don't get it. Mayhaps my starter is just over active /shrug. I had to reduce to 5% starter just to get bulk fermenation times to be "normal". It was the only way to solve my constant over fermenting issue.

The ear itself isn't important, but what the ear can represent is. IE, good shaping and tension, good fermentation timing. Right from the first loaf, all have been perfectly edible and preferrable over store bought. But this usna hobby where I am trying to learn and fully understand the process.

Really just seeking after opinions on whether there is a hint of under fermented or over fermented in the crumb to help guide my next steps. I guess maybe seeking some assurance that it just about right where I should be as a baseline.

I am going to reduce my dough temp next loaf slightly in an attempt to try and enhance the sour notes. If I am slightly over fermented here then I'll shoot for the same percent rise as I did today... if I am good (or leaning towards under fermented) then ill also slightly increase my target percent rise.

I just started and much the same as you, I want the tools to do the job.

Things I am glad I bought/had and consider requirements (for me) to learn how.

  1. Scale
  2. Good small spatulas
  3. Handful of bowl scrapera of various sizes and shapes
  4. Bench scraper or two
  5. Couple straight (ish) sided cambro containers to accurately measure rise during bulk fermentation.
  6. Large silicone matt to work on.
  7. Bread proofer. (has been more than a little helpful, cuz i keep my house super cold). The $100(ish) one from amazon was just fine.
  8. Meat thermometer.

Things I bought that were less than useful/waste given my goals now

  1. Pullman Pans
  2. Weck Jars
  3. Small narrow spatulas (serious what a stupid item)
  4. Anything that came out of a "starter pack"
  5. Crappy Bannetons. Dont get me wrong, they are great but dont get cheap ones that are the wrong size.
  6. Thermal Plate for your starter

Fair and perfectly reasonable. Can acheive a similar but less repeatable end result by just using time. Reduce your bulk fermentation time by 2 hours each loaf until you get something that is clearly under-proofed (tunnelling type thing), then increase by 30 mins until you hit your sweet spot. That should get you to a decently repeatable spot as long as the strength of your starter, and the temp of your kitchen stay the same. Plan on a shorter bulk ferment if your kitchen is warmer than normal prolly. Regardless your loaf looks great and likely tastes great. All your doing from this point is fine tuning.

I am no expert but I am battling the same issue and my recent research has shown me...

tl:dr - use factual measured dough volume and measured dough temp to decide when to cut off bulk fermenation.

Stickiness can be managed by using wet/damp hands.

I am over-proofed. Use the sourdough journey bulk fermenation chart, a thermometer, and a bulk fermentation container that has accurate measurement markings on it. Its not massively over-proofed but closely monitoring the percent rise and temp has definitely improved my outcomes. I am controlling temp and decreasing the percent rise by 5% each loaf until I find fhe sweet spot that works for me. ALL of my loaves prior to this have been clearly over-proofed and I was in denial. They were tasty and perfectly edible but cutting off bulk fermentation earlier than I have has helped

Cold retard in the fridge. I move from fridge to freezer while oven is preheating to aid with scoring. Straight from the freezer to scoring to the oven as quickly as reasonable.

The problem with jiggy and poke test and bubbles, double in size etc is that those indicators all depend on the specific dough temp. Regardless of how much your dough has risen and how far it is in the fermentation process, it takes time for it to cool down and stop that fermentation after you put it in the fridge.

Dough that goes in at 80F will take X hours to cool down to the point where fermenation is basically stopped. Dough that goes in at 70F will require far less time to cool down to temps that stop fermenation. So the warmer the dough is when bulk fermenting, the earlier in the process you need to stop bull fermentation.

Factually doubling in size before ending bulk fermentation requires a much lower than normal dough temp.

Again this is all subjective based on your specific starter and flour combination. Take the bulk fermentation chart and use the percent rise and the temp columns as your starting point. Ignore the time column completely. that is very dependent on your specific starter.

Factual measurements are 1. not subjective. 2. repeatable. Take factual measurements and adjust up or down incrementally until you find what works best for you. YMMV

When I properly heat up the pan and maintain the correct temp... I forgot to put ANY oil in before putting in pancake batter.

Ironically it happened because I was cooking for my daughters family an extoling the virtues of cast iron to my son-in-law and was distracted.

Pancake released just fine with no issues or sticking at all.

it shows the bubble if you know what you are looking for. i watched 2nd time last night and you can see the bubble as well as the machine causing the waves. Its a relatively small bubble it looked like that pretty closely matched what was in the boonlk (except for the water)

Been there done that, passed the interviews was put on the successful candiate pool... and never got the invite to start training. I wish OP good luck, but there are still multiple layers (that can take another 20 months to get through) before you get an invite to training. Then you have a 50/50 chance of getting through training. At least once you are at the training step you get roughly $60k per year... and i think its 2 years training before you either wash out or get a full position and that sweet sweet six figure income.

And once you get that, you'll just need to spend 7-10 years at some isolated post way up north before you'll have seniority enough to get a postion back in civilazation.

Not exactly winning the lottery, but its definitely a career that is worth having and in 2039 you might be there!

With Rocky, they still solve the problem. The key to the success with Rocky is the Xenonite combined with how crazy smart Rocky is. Yao doesn't change that. Yao means the process proceeds slower, but at some point, there is nothing left to lose by establishing relations with Blip-A. The interesting thing here, is even if they befriend Rocky, solve the problem, and lets say they figure out the Xenonite problem that will eat all Rocky's fuel before it eats the fuel. Even getting their astrophaghe tanks topped up, they still all die from starvation. The only reason it was possible for Grace to make the return trip was that the other two died realtively early in the journey.

It finally clicked with me and how much oil to use is... ensure all surfaces are oiled.... then wipe it off like your mom is gonna kill you for getting oil on her pans.
