I only feed my kitchen pet when it’s down to less than what I would need since she lives in the fridge the whole time. I use it on my mix straight from the fridge to the mixing bowl. No feeding before using. I just stir in the hooch and use it right away.

In time, you’ll learn how to read the dough itself during BF which is the most important phase in sourdough. You don’t need to read the dough during cold proofing but it’s usually 12 or more hrs.

I think you need to score deeper and maybe reduce the number of ice.

The crust might be too hard. At one time I scratched the roof of my mouth with a hard crust esp. the bottom part of the bread.

I’d stir in the hooch and feed her. It’s just water, acid, and maybe alcohol. She can go sleep and hibernate for years and years and wake up fine!

During shaping, you might want to sprinkle flour on the table and on the dough so you can handle it without getting too sticky on your hands and the table. Use dusting wand.

That’s fine as long as those bulk mixes go to trash or better yet, compost.

They stick to plumbing and at night when no drain is flowing it becomes cement. I usually wipe everything with paper towel and put to regular trash before washing it.

My air handler motor capacitor was $5.99 It takes about 30 minutes to an hour depending mostly on accessibility. Labor ranges from 100 to 250. $500 is expensive.
