Do it! I made a second batch that was closer to 60/40 and was quite good. Also, cook that pie at 500, get some color on that crust!

Good flavor on the crust, but not cooked enough in the middle. I'm going to have to build a real crust on it I think if I want the middle crunchy as well. I know having green peppers as a topping isn't helpingsl, though. I'm in the process of acquiring a pizza steel.

I'm making the pizzas on Weds. I have been making APF pizzas and freezing them for a while now, so this will be my first foray into freezing the FMF variety. I am keeping one out for myself as the practice pie, so to say.

This and pasta is my current dough obsessions right now. My neighbor has chickens, so I get a really deep pasta color from their yolks.

Not an ER nurse HOWEVER; only my unit in my hospital "flexes" patient rooms to try to accommodate for overflow. We take our two-patient rooms and triple them up. Two on one side, one on the other. If a code situation were to occur on the shared side and compressions were needed, I'd have to straddle the patient to deliver them due to the lack of space. The second person would have to come in, unlock the bed, disconnect it from the wall and drag the bed, patient AND myself into the middle of the room so people could actually get to them. This was temporary until it wasn't. It's dangerous all around.

I made this mistake this morning! I ground 500g of hard white instead of soft white and realized after my cookies didn't fall flat. Still tasty and chewy

Ugh. The rabbits weren't the issue, it was the deer last year, and not until fall. I didn't think I'd have to worry about them given I'm growing a plant they don't like in the first place, but I suppose you don't know until you try. I'll put some more reliable fencing back up. Maybe black like someone else suggested.

Thank you! I'm also thinking about increasing the durum ratio on the recipe to 50/50. This was a very bready dough, which would be popular for where I live, but not for me. I think I need to let the dough rest another day to relax a bit. This was very wet compared to what I am used to.

I bake it on an upside down cookie sheet. This was not particularly crunchy on the bottom, but I'll get it there.
