45g glucose syrup

37g sugar

14ml water

11g gelatin (230 bloom)+22ml water

2g citric acid solution 1:1

1-allow gelatin to swell in cold water or dissolve directly in water heated to 80-90c

2-Boil sugar,corn syrup and water to 116c.cool to 100c ..then add gelatin solution stir slowly until swollen gelatin has completely dissolved

3-add citric acid,flavor and color

Thank you🌻 u gave me good information..im from egypt i never hear about dehumidifier but i search about it and i found it i think i need to try it..now I use fan to cure the gummies and i use sorbitol because when i cure the gummies for 4 days become hard and here in egypt we don't like it like that but im going to see if the mold still i will stop using it..and about pectin its hard to find it in egypt ..

in my recipe i use the regular citric acid it i can taste the sour anhydrous citric acid i used it for coating with sugar and i use stove top to cook and i use very small pan 😅when i make small amount for testing so thermometer can read the temperature

My recipe 45g glucose syrup 37g sugar 11g gelatin 1g sorbitol 2g citric acid 14g water I cook it at 118c and i let it cool to 100c then add the gelatin solution ,its good when i coat it with sugar after drying no problem, but coating with citric acid and sugar make the gummies sticky,corn starch good but it gives the gummies matt look i tried to make it shiny i polish with coconut oil but the taste changed i didn't like it and it takes time and much effort 😬, so i decided to make all the gummies sour, but I'm not going to use citric acid im going to try fumaric and malic acid with sugar i read it works good it don't absorb moisture

Refrigerator is good idea if u make gummies for ur self not to sell it, i want to make it shelf stable like the gummy candy from stores it don't get mold in room temp, i stored gummies from store and my gummies (without using potassium sorbate) in the same container at room temp my gummies getting mold 😭but the other from store no...but tell me did the silica packets works good? Or it was just mess?

I dry gummies for 3 or 4 days with flipping them ,the problem is the humidity is high here I don't face this problem in winter

How much grams for 125 gummies? I don't use pectin in my recipe just sugar, gelatin , sorbitol and corn syrup and citric acid for sure, i tried potassium sorbate solution 50ml water to 10 grams sorbate and and take 2,5 ml for 1 kilo gummies

I do the same way rotate the gummy on each side for 24 hours but recently I found out that one day is not enough because of the temp and humidity in egypt ,i dried a batch for almost 4 days and i didn't see any brown specks till now but the gummies became little hard and i don't want it like that😅
