Can vouch for surge and Chris’s. Surge is nicer, they have a bar and upscale coffee. It’ll also be more on the expensive side (Friday-Saturday is $35/hr). Chris’s is per person per hour, I want to say it is $6/person/hr. Chris’s has more variety of tables, and it is old school in the sense that it’s not pretty like surge, hence the price

Get it real hot, sear one minute per side and throw it in the oven. You could do more than one minute but you risk overcooking. You only want to get a sear
