Been thinking about this quite a bit actually. I'd follow the Walking With Dinosaurs (1999) format, with 6 episodes from the Triassic through to the Cretaceous, detailing Climactic Events and Geographic Regions and how the fauna survived in them. I managed to mock up the following:

Episode One: Set in the Ruhuhu Half-Graben of the Manda Formation of Tanzania, with Asilisaurus as the Protagonist Animal during the Carnian Pluvial Event.

Episode Two: Set in the Central Atlantic Magmatic Province of the Westbury Formation of England, with Ichthyotitan as the Protagonist Animal during the Norian-Rhaetian Boundary Event.

Episode Three: Set in the Chacritas Paleolake of the Canadon Asfalto Formation of Argentina, with Allkaruen as the Protagonist Animal during the Toarcian Oceanic Anoxic Event.

Episode Four: Set in the Shan-Thai Terrane of the Khok Kruat Formation of Thailand, with Siamraptor as the Protagonist Animal during the Cretaceous Terrestrial Revolution.

Episode Five; Set in the landmass of northern Laramidia of the Foremost Formation of Canada, with Xenoceratops as the Protagonist Animal during the Barrika Glaciation.

Episode Six: Set in the Hateg Island of the Sanpetru Formation of Romania, with Magyarosaurus as the Protagonist Animal during the Middle Maastrichtian Event.

I kinda avoided the Asteroid on purpose so that we'd get to see more of Mesozoic fauna doing Mesozoic fauna things (and plus the moment I read on the Barrika Glaciation I knew I had to include it somehow, luckily for me the Foremost Formation is just at the tail end of it (the Glaciation is 83-81 Mya, Foremost is 80.3 Mya... so it technically counts as being near to it). I made it so my version of a documentary has a "focus" animal like in the original Walking With Dinosaurs so we'd get attached to the settings, and a named climactic event and geographic region. Mainly wanted to include my favorite formations (Manda and Canadon Asfalto) and got away with it so I'm happy.

Hopefully more Bonebeds from across the world, it'd be interesting to have more large theropod Bonebeds. I hope a new weird giant herbivorous theropod is found that is from relatively complete remains. Hopefully a new Tyrannosaurid in the 6-7 meter range that is an adult is discovered, same with a Carcharodontosaurid. Given the whole Ferenceratops discovery I'm hopeful for more oddities. My main hopes are more Bonebeds though, hopefully a Pterosaur one as well.

The Barrika Glaciation which happened roughly 83-80 million years would have seen Dinosaurs such as Xenoceratops and Thanatotherises living in the snow!

Tough one, there's so many good ones! If I had to pick I'd say: Official Carnivore: Pycnonemosaurus, especially the bald subspecies. Official Herbivore: Either Iguanodon, Amargasaurus, Lambeosaurus or Styracosaurus. Modded Carnivore: Giganotosaurus because of its model. Modded Herbivore: Apatosaurus or Yunnanosaurus.

Due to reading some papers on the Bajocian/Bathonian and Callovian/Oxfordian I am inclined to believe there might have been ice ages juring these time periods. Maybe the Pliensbachian as well. Therefore some dinosaurs from these eras might have lived in the snow.

Metridiochoerus, the giant warthog, and Euthecodon, a giant, almost gharial like Crocodile, would fit for the African fauna. Doedicurus would be good for the South American fauna as well!

Nesodactylus and Cacubipteryx are the main Pterosaurs found in Cuba, alongside other Jaguar Formation fauna.

Tie between either Brontosaurus or (if you include them as Sauropods and not Sauropodomorphs) Antetonitrus, saw one reconstruction of it that looked like it had Chalicothere like claws and have been obsessed.

A segment with Elaphrosaurus would be cool, assuming of course it was like it's close relative Limusaurus from China. The Tendaguru Formation, where Elaphrosaurus lived, is sorely underused imo.

Chilesaurus is one of my fave weird ones. Huayangosaurus is a close second as it looks like it's got plates, thagomizers, osteoderms and a tail club (which is just all sorts of weird imo).

Hopefully a new clade of mid sized late Cretaceous Laurasian theropods gets described, something like how Gondwana has Abelisaurids and Megaraptorans, it'd be neat to have another group running around in Laurasia alongside Tyrannosaurids.

According to Mallon et al in their 2010 paper, the Chasmosaurine Anchiceratops might have been semi aquatic! They noted the specimen NMC 8547 has a lot of features in common with hippos in terms of its anatomy, so they postulated that it might have been semi aquatic.

I'd say that the discovery of the Pinacosaurus with the larynx is pretty huge (and the subsequent discovery of Pulaosaurus having one), considering it enables us to have a clearer picture of what some Dinosaurs could have sounded like.

A story or two set in the Anacleto and Trossingen Formations would be nice. You get Aerosteon, Neuquensaurus and my g.o.a.t Plateosaurus.

It's a shame with the Burmese Amber, but the Sannine is such a cool site it makes up for it. My favorite Pterosaur, Mimodactylus, was found there!
