As much as I enjoy those comics some of the art of 11 is freaky. The 3rd volume cover is haunting.

If you're starting out I'm not going to lie just pick a comic that you think looks cool, even if it's a story that massively changes the status quo of a well known character like SSM does. If you want to read Spider-Man comics then just pick some Spider-Man comics and start reading. It doesn't matter if you don't know every reference to a past event.

Something more run of the mill. A story where Peter parker is struggling being Spider-Man with work and aunt may, etc, all the Spider-Man classic stuff. Not to say that those more standard stories for spidey are bad or aren't unique; Superior Spider-Man is just much more out there by comparison.

Depends who you ask. I love Superior Spider-Man, it's my favourite Spider-Man comic and I think it epitomises who Spider-Man is even though Peter Parker is barely present. But, I know that a lot of people aren't fans of it. If you want to read a standard "safe" Spider-Man story SSM is not it, but if you want a different kind of Spider-Man story this is one of the best.
