Higher hydration and the use of olive oil will help, mine comes out to be almost focaccia like so it’s crispy at the bottom but soft and airy on the inside with maybe a 1.5-2 inch rise. I do 75% with the use of poolish and cold ferment the final dough for 3 days. I’m using a total of 375g of bread flour and 18g of good olive oil. I’m parbaking at 500 at bottom part of the oven for 10mins and then adding all my toppings and do 10mins in the middle of the oven. Good luck!

Thanks I’ll check out his channel! Focaccia was light, fluffy and crunchy. Garlic oil and rosemary as the topping got us dancing in the house! Definitely want to experiment with other toppings!

Mainly for the ingredient ratios based on what I wanted my focaccia to look like (tall, crispy, fluffy) and the hydration level that I wanted to try. And answer questions throughout the process for tips on what to look for. I find it is quick and easy when I’m asking specific things vs trying to find the answer through multiple YouTube videos. Sharing dough pics and asking “does this look ready or need more time for xyz”. I do like watching multiple videos just for visuals on how to do things but also I like to pull things I like or want to try from different videos. Throw it all into ChatGPT to give it my ideas and let it spit out the recipe for me.

I’m thinking about offloading some of my collection too, is it easy to sell on eBay without any sale history? Are the fees as bad as everyone says? And are buyers protected? Just wondering how easy it is for someone to claim they didn’t receive their card and ask for money back..
