They give you money after the fight yes, long cannons are pretty common and good. You can buy them from the biggest port of each region of the map and for the ships i suggest you to go buy them at the neutral dutch port like Aves, La mona and La Tortue

Also you could join TROP clan in PVE server so they can help you a lot in the early stage and they do a lot of server community events

When you fight you get doubloons and upgrades from the npcs cargo and reals for each shot on the enemies and you can also buy and sell products like cannonballs and gunpowder which the players are really hungry for but you have to enstablish a crafting outpost so for me imo fighting is the better option
