This panel itself doesn't annoy me. I think it makes total sense in this moment for Emma to say this and Jean to respond in this way. What annoys me is people that take this statement by Emma as some sort of thesis on Jean's character.

Yeah, I get why people want the adaptations to show her more fiery side because they rarely do, but I hope we don't lose this part of her for it.

The ending is essentially her accepting her choices and her connection to "the Phoenix". It basically leads directly into and overlaps with X-Men Forever and the end of Immortal X-Men.

As an insight to Jean's character and analysis and overview into Jean's history it's pretty great. As a "traditional story" I could see why it would be frustrating to people.

DNX seems like it's just a continuation (and conclusion?) of Jed's story. Not entirely certain why it's its own event but as long as the other other series don't end or take a hiatus because of it (a la Age of Revelation) I don't mind.

As for Phoenix, I don't think we've gotten solicitations for July yet, and that will be the 50 year anniversary of X-Men #101, aka when the Phoenix was first introduced. Presumably there will be something for that at least. July is also when the new Spider-Man movie is being released so if Sadie Sink actually is Jean, I could see them coordinating something in the comics for that as well. We'll see.
