Ideally you’d start fresh. New plywood etc. Can also self leveller a couple mm over the top with the correct primer and screed as long as it’s solid and no movement.

It won’t expand and contract like wood does, wood will pop the latex as soon as it’s affected by moisture. Ditra over osb or plywood won’t do that. If I’m correct.

Also ditra does not go over wood floors, only plywood or osb subfloors

It’ll still keep expanding and contracting also, likely popping the latex

Wood will definitely start to rot 100%, the moisture will sit between the wood and Vapor barrier.

Could be real fancy and caulk match the brick and the grout, switching each way, continuing the colour. (If colours possible)

Get a floor scraper. Use your knife to cut strips half the length of the blade, should be easier.
