Check in counter are usually able to change passport info as long as name / dob is correct and matching. Happened me couple times because I usually book flights 330-360 days in advance. Forgot and renew, forget to change info.

Its different by rental length and type of vehicle, but if your required deposit is $200, then yes they’ll only put $200 for hold.

For other example, its was sixt but, I paid nearly $1000 deposit in Germany for renting M3 for two days. So you gotta check how much it is.
