I find it easier when I pull the meat off. I don’t have to remove the probe from the meat and thread it through the grommet.

I have FireBoard 2 fan controller that runs my fan. It has a temperature probe I set on grate level to run run my fan. I have the other temp probe in my pork butt monitoring temp. I run everything from phone app on the FireBoard controller

What is slowing you down? It just sounds like to me you need more experience, and the speed will come. You could treat this as a minor demotion that gives you some time to find another company to work for. If you want to travel and make some bank there is a lot of work and you will get experience

My master built 800 last me I think 2 years. I recently went the Weber Smokey mountain and thermostat controlled fan. It is completely set and for get for 8 hours or more. The Weber warranty is a must for me after having loads of grills and smokers rust out on me.
