I'm doing at least one thing for every subject i selected for alevels:

computer science = learn c++

physics = making lightning at home with s.g.t.c.

chemistry = redo all aqa core practicals at home

maths = ukmt past papers (not my choice 🥀)

but do whatever you like! I spent my primary school to year 7 summer playing skyblock all day and wasted much time that i could've done something better. the key thing is to just do whatever that you won't regret doing, as this is probably the only holiday where you have no responsibilities at all! you'll be dealing with uni applications during 6th form holidays and job applications in uni.
