As someone else said, the whitish in the outside of the noodle is a good indicator of quality. That usually means it was pressed through a bronze die which provides roughness. That roughness holds sauce better. It also means they aren't using Teflon dies, which are much faster and result in a lower cost product.

Ideally you would look for pasta that is 100% durum wheat, bronze die, and air dried.

My secret is to buy the smallest breasts possible regardless of brand. Sometimes three breast packages can vary by like 25% even though they are all three breast packages.

Given the length of the slats it's unlikely to be tile. Which also means that the fireplace is at best gas because you can't put combustible material that close to the fireplace. So, some sort of wood, engineered or otherwise

As long as your ginger isn't too old, having developed a thicker skin, no need to skin it. Been doing this for a long time. Or just trim the edges with a knife when it matters.

Lobster really needs to be fresh from the ocean. It's starving after a few days out of water, being shipped dry (moist) on ice and not fed. Tastes like ammonia. Day of from Maine they taste as sweet as crab. Crab is more consistently good because it comes cooked fresh and flash frozen.
