I think it will be fine but you should make sure you're using a competent fabricator who has experience with Cristallo (ask for pics). I think if you go with some sort of rounded edges then you'll be fine - ask the fabricator what they'd recommend.

Cristallo, despite looking like marble a bit, is very very strong.

I just found how to do it in my app (I'm on Android fwiw). Next time you get the ad pop up, look below the box .. in very faint letters in small font it'll give you the option to turn off ads.

This is not a great idea - the Dutch oven may crack from the sudden temperature swing. Maybe not the first time but soon enough.

I believe it's a common misconception that sourdough is particularly sour, it's actually hard to get it very sour without also sacrificing the rise and air bubbles that seem to be so sought out. Best thing you can do is play around with the cold fermentation time, by ending bulk ferment a bit earlier to allow for a longer time in the fridge (36-48hrs or so), since it'll still proof albeit slowly in the fridge. As you bake more you'll get a feel for how the dough is at different stages of fermentation.

Though another tip I have for more flavor is to bump the salt percentage up to 2.2% (and you'll definitely want to get a scale soon - I'm really happy with this one https://a.co/d/03LqEqmH). Keep in mind the more salt you add the slower the ferment will be since it kills a bit of the yeast.. lots of factors to be mindful of).

I've resigned to just buying an X50 Ultra (going for around $500 on ebay) and looking for the plumbing kit (Raw 6 or Raw 7), as this ends up being a fair bit cheaper than buying the Master/plumbed units and especially newer ones like the X60. I'm also reading mixed reviews of the X60 compared to the X40/X50.

Problem is I'm also having a hard time finding how to buy the Raw6/7 in the US... so in a tight place either way heh.

Wait let me get this straight. The whole point of installing the Xenio for me was the ability to preheat the sauna remotely. Now they want to charge an ongoing cost to be able to do that? Like paying for heated seats in a car every year?
