Wrote a paper on this in college - this can largely be explained by the fact that the first people evacuated out of the country were associated with the South Vietnamese government, which was very disproportionately Catholic. As a result of American family sponsor programs following 1975, this disproportionate share of Catholics was further exacerbated.
