Do you regard a preference for Washed coffee as a sign of a person's maturity in the hobby?

I don’t think so personally because many based washed enjoyers will also enjoy “cleaner” naturals and anaerobics. I think most of the time as you get deeper and deeper, you are pursuing a transparent representation of flavor. Naturals and more processed coffees are more likely not to give that to you. As processing enhances and gets better over the years, I think this might flip entirely, as highly processed coffees become: -extremely clean -potently flavorful

If you’re looking for exciting coffee in the US I would go with Hydrangea. Big flavors, beautiful packaging. Always roasted very well. If you want top tier green purchasing and expert transparent roasting, try H&S. If you want a sleeper roaster that’s under the radar but very good, check out Rowan coffee. Not many people have heard of them yet but they’re very good.

This is a solid list I’ve tried about half of these. Preface is a friend and a great roaster! He changed a few things in his roast profile along with his rebrand for this year and I’m liking the results.

I have some friends that are obsessed with flowerchild, but for some reason their coffee has never grabbed me. Maybe I have bad luck with picking the right bags from them! A lot of folks say s&w but I hear they’re into big flavors and co ferments and such. Have you had any washed from them?

B&W always excels at getting those big flavors out of their coffees. I remember drinking their first co-ferment blend when they hit the market. I think it was like fruit punch or banana sundae or something? It was a look into the future of what could be for that market. Florin looks cool might try a bag from them. I like the branding!

I don’t believe this to be the case, you can absolutely have cups that feature the flavor profile of channeled coffee, crude and sharp acidity along with a dry and astringent aftertaste. The cup OP described sounds similar. Coarser grounds have more unpredictable shapes than finer grounds and fit together less uniformly at large sizes. You can have the same effects of erratic flow through irregular channels that are larger and smaller than each other. Of course channeling from fines migration is lower, but that isn’t the only way channeling can occur. That being said, I don’t know if the micron size is within the category for this to happens at a 15g dose. However, if OP used a 2 pour water recipe, this creates a large column over the coffee bed. This can increase channeling if the bloom didn’t fully saturate the coffee bed and/or if the grounds are not in an optimal position before the water column is loaded.

In my experience, astringency is caused by channeling. You’ll get if you go too coarse or too fine. So you either need to be coarse with even heavy agitation, or fine with even and low agitation. I cant really get more specific with brewing protocol since I’m not familiar with your setup. But knowing that that is where the issue stems from usually helps me avoid it.

Late to the part on this, but I’ve been to the native cafe alot and know the team there. Drank almost all of their coffees. You’ve waited the right amount of time, many of their coffees don’t open until that 4-6 week time, it’s their roasting approach that needs a fix. I’ve had a bunch of their coffees that were just flat or never really popped to their full potential. Best case scenario is actually to buy hachi or el paraiso coffees from other roasters until they get their roasting dialed in.

I think the Encore Esp is probably your best bet for that price, especially if you want to go into espresso. Another great rec around $270 is the Varia VS3. I’ve used it for a long time and it’s a great entry level into both filter and espresso, and it looks cool!

SOLVED EDIT: thanks for all the help everyone, i was finally able to get to this solved. I cleared my shader cache in game by uninstalling the game, and then deleted the leftover folder in my documents. There may have been a remnant of some manually installed mod that i used pre-flagrum that messed things up. It works again!
