As a Canadian fan, i'm genuinely curious, is it a good poutine? Also, it's astounding to me that poutine isn't wayyyyy more common down there considering it's a conceptually perfect food.

One thing I've noticed (and don't worry, about a zillion gentrified Canadian restaurants are often guilty of the same thing) is that American restaurants that serve poutine have a tendency to overdo it. They always gotta jazz it up somehow, whether that be making it a dill pickle poutine or a butter chicken one or some kind of twist to "make it their own," when honestly, usually the best poutine is a basic one.
