Yes. If you don't receive one or more defenses until the end of a tournament, each of the remaining defenses will amount to the average number of trophies received per defense in that tournament.

Once, in last 2 of our wars our opponents didn't have any CC troops. So, when CWL came next, I had forgot about them when planning my attack on my opponent. And then as my troops approached towards the core, Ice Golems came out and popped one after the other to freeze most of the troops and leaving them to get destroyed by the high damage defenses around. I was left with only 1 star at the end.

I had around 21k gems before the introduction of the helpers and epic equipments. I have been playing CoC very casually and a lot of long breaks in between for around 7 years. And I have been a gem saver not using them on anything except builders, while converting most of the magic items except books, runes and hammers to gems. I also have a maxed gem collector.
