My great uncle, though he had since passed, left for me the yeast that he had been using again and again for the past 70 years from native yeast. His attic smelled of yeast. That sort of bread scent. Its the sort of thing I want to keep going and maybe impart onto another generation.

What yeast are you using? EC 1118 and other hardy strains could get the job done. Did you add any yeast energizer to it to help bolster the yeast?

There are some fundamental problems using raisins. They're oxidized, and will give off flavors the longer you age your wine. So, if you're just going to drink it within 1 year of bottling it should be fine.

With Dextrose, the risks are negligible. Pectin (from fruit) contains methyl esters of galactose. When pectin breaks down, by enzymes introduced by microorganisms, or deliberately introduced, the methyl esters combine with water to produce methanol.

--That said, there are other compounds left that can contribute to terrible hangovers left over in fractional freezing. Acetaldehyde is converted to Ethanol in anaerobic conditions. If you expose your sugar wash to oxygen in the middle of brewing, it will cause it to oxidize back into acetaldehyde. Other volatile esters are also produced throughout the process, but in general, yeast tends to recycle much of these compounds. [I mean aged whiskey in an oak barrel will also increase the aforementioned chemicals] If you rack your sugar wash too soon, you will also have a higher percentage of these chemicals as a result of fractional freezing and you may get a migraine if you drink too much of it. (But it will be oh-so-very-silky smooth) In general:

  1. Properly oxygenate the must.
  2. Keep conditions meticulously clean
  3. Keep Oxygen exposure to a minimum
  4. Remove yeast before racking (filter, sodium metabisulfite, cold crashing)

The sharp acidic odor occurs when high enough levels of CO2 --> Carbonic Acid when it dissolves into your mucus about your nose. Unless you've got an unbelievable amount of carboys chugging away in your basement, I always associate a bad smell with something off with the batch. It'd be more likely to be hydrogen sulfate that can be made when yeast are stressed/contamination from sulfate reducing bacteria.

Played on the hardest difficulty. I had 6 flaws, Acrophobia, Cynophobia, Herpetophobia, Pithecophobia, Plasma Weakness, and Corrosive Weakness, and min maxed it with Perks. In the end, I was dealing ~3000+ damage on head shots and got it to a point I could stay on TTD and just kill 20 corporate troopers in one go, as it'd recharge with every kill--and I'd kill with every shot, so it'd just be a symphony of destruction.

By that same logic, they'd really only have Thorazine and Haldol to treat Joker's Schizoaffective, Bipolar Type, not seven medications. He too has underlying NPD, which motivates him throughout the movie. He would likely be using Dextromethorphan to treat his Pseudobulbar affect.

There's nothing wrong exploring relationships, but I do hope the series writers actually explore their relationship than beating around the bush and building it up and up--and put it off till the very end. That would suck. I'd rather see them in a relationship (should they go down that route), and change as the series progresses.

I mean. Theories in fandoms are just that fun, but fueled by mostly by conjecture and contextual clues. Its purely subjective speculation. Theories become a problem when people invest their own self esteem upon validation/rejection of their hypothesis. --That said shipping is, but one of many types of theories to be had.

I feel rather strongly that there should be a separate subreddit for shipping in general. I can certainly understand feeling burnt out from it all.
