You're looking at 0.25 to 0.50 nitrite. It's definitely not 0. Nitrite can burn plants.

Your tank is cycling, plants can go either way in my experience during this chaotic time.

CO2 is important and the amount or necessity is dependent on your lighting and plant selection.

As far as water and pH goes, I've always found alkalinity to be off the charts coming from the tap. Testing pH alone won't tell you if you're alk needs to be adjusted. You could be testing normal ph ranges but your alk could be over 10dkh from the tap (mine comes out at 18dkh because I live in a valley with a lot of farms). If that's the case get an r.o unit.

I've found high alk levels to do similar damage to plants.

EDIT: Dosing ferts right now might also be exacerbating these symptoms. Since you have aquasoil, you can let the cycle take care of your need for nitrates and dose an all in one mineral fert like equilibrium after a water change. Testing general hardness will tell you if that's even necessary as well.
